Tuck into yogurty hummus…..
Posted on 21 September 2011
We have been concocting recipes in the Farm Kitchen again and would like to introduce you to yogurty hummus made with our tasty Low Fat Natural Yogurt. It is dead easy to make (if you have a food processor) and is delicious, nutritious and versatile.
What you will need: 1 tin of chickpeas; 3 tbsp Stapleton Low Fat Natural; 2 tbsp tahini; 1 tbsp olive oil; 1 clove of garlic; juice of 1 squeezed lemon; 1 tsp cumin; sprig of fresh coriander; 1 tsp salt.
Method: Place all of the ingredients (apart from half of the coriander) into a food processor and whiz until smooth. Garnish with chopped coriander and olive oil (you could also sprinkle some grated lemon rind on top if you feel like it!).
Serve with pitta bread or vegetable batons. Hummus is also great in sandwiches with salad, grated carrot and tomatoes. It is a good thickener in soups or as a base in bean burgers (more recipes for another day me thinks!).
