Courgette and Bean Dip
This dip is a perfect starter at any gathering. We have adapted it from a recipe on the BBC Good Food website who serve theirs with pitta bread.
- Fry the courgettes and garlic until the courgettes are tender (but not mushy!)
- Set a small handful aside and place the rest in a bowl with the beans, lemon juice, yogurt, mint and salt and whizz with a hand blender until as smooth as possible.
- To serve place in a bowl/bowls topped with the remaining courgettes and fresh mint. Drizzle on some extra oil and a squeeze of lemon juice and tuck in with your bread of choice.
2 tbsp olive oil
1 courgette, finely diced
2 garlic cloves, chopped
400g can cannellini beans, drained
juice ½ lemon
200g pot Stapleton Greek Recipe Natural yogurt
handful of chopped mint
2 tsps salt
